Influence of Dielectric Barrier Discharge Plasma Treatment on Corn Starch Properties

This study evaluated the effects of dielectric barrier discharge (DBD) plasma technology on some physicochemical and structural properties corn starch. Amylose content, solubility, water absorption index, turbidity, relationships, surface morphology were measured at 100, 200, 300 Hz excitation frequencies 10 20 min exposure times. The treatment 200 promoted most significant modifications in amylose morphology. Turbidity did not change significantly. granule became smoother with presence pores. Slight changes observed ordered structure Plasma changed several properties, significantly decreasing to amylopectin ratio. is recommended increase content starches.
